It so happened that Pancake Tuesday, Shrove Tuesday, Fat Tuesday, Mardi Gras, or whatever you want to call it, fell during the school winter break here in Denmark this year. Soooo, I decided to be one of those cool Mums that makes pancakes with her kids – well, with the youngest, Halley (3). The older two were more interested in eating them than making them. Here’s the recipe that I used – it’s DEAD EASY and super quick.
300g self-raising flour
2 eggs
500 ml milk
pinch salt
Whisk the whole lot together in a bowl. Melt a little butter on a frying pan and ladle the mixture onto the pan to make pancakes in whichever size you prefer.
We ate ours with hazelnut & chocolate spread (an organic version of Nutella) and chopped banana. Maple syrup is also always a winner in this house. You can eat them with whatever tickles your fancy really though. Bon appétit!

YUM. Do you need someone to play a troll and live in your cellar that you will feed pancakes to? If you do, I’m offering to be that someone.
I was just thinking that it would be nice to have another troll in the basement. I already have two down there.
