Funky Pizza Bites

The first time I made this alternative-style (cheater’s) pizza I made it in large squares and served it with a salad. The version featured here I made as an appetiser recently when we had friends over for dinner. It went down well with kids and grown ups alike. It’s really easy to make and tastes pretty good.


Inspired by Funky Hverdagsmad

2 rolls of puff pastry (I used the bought stuff, but I’m sure it would taste even nicer if you made your own)
cherry tomatoes (preferably different colours), cut in half
feta cheese, crumbled
fresh rosemary
1 red onion, sliced in rings

Heat the oven to 200° C. Roll out the pastry dough and cut into circles. Add some of each ingredient to each shape, ending with the feta.  Season with salt & pepper. Bake in the oven for 15 minutes.

    Wo yeah!!! Easy, quick and delicious! Must see tomorrow if I can locate some frozen puff pastry….its not something the Spanish would go for I dont think…but we’ll see. Yip…be really handy as a starter or quick lunch with salad…and a nice cold glass of course! I would add a dash of tabasco as well as I like spicy, spicy.

    Donna, the original recipe suggested a dollop of tapanade on the top. You should be able to find that quite easily ;-) Probably great with a glass of cava…

    Liz, no tomato sauce…just your thing ;-)
    I still fantasise about those creamy lemon chicken & broccoli pizzas we had the day after your wedding. YUM.

    Yeah….I eat tapanade a lot…usually just on crackers for a quick healthy snack. I am going to do these maybe tomorrow at lunch with a bottle of cava….for me and Terry….
