With springtime knocking on our doors the BBQ season is going to be coming at us soon thick and fast. This side dish goes great with just about any kind of grilled meat. Tzatziki. A fab little creation – thank you, Greece. I’ve made many tzatzikis in my time, but this recipe is my favourite. Enjoy!
Inspired by Suveræne Salater
800 ml Greek yoghurt
100 ml crème fraîche/sour cream
2-3 cloves garlic
a little olive oil
a few Kalamata olives
salt & pepper
Grate the cucumber and wring it in a tea towel to remove excess juice. Mix the yoghurt and crème fraîche/sour cream together. Add the cucumber, grated garlic and salt & pepper. Mix well. Serve with a little olive oil drizzled over the top and sprinkled with the olives.
