I was in two minds as to whether to post this or not, as it’s by no means rocket science. However, I love these nuts and I think my new camera lens liked them too, so I thought I’d just whack them on here. They make for a healthy snack and are also good for serving with drinks and the like.
2 bags whole almonds
salt (preferably sea salt)
a little oil
Heat the oven to 160°C
Place the almonds on a baking tray and toast them in the oven for 15 minutes. (Try them after 15 minutes and give them a couple more minutes if you think it’s necessary). I always put a timer on because if these babies get even a minute too much they taste pretty terrible. I’ve tried it.
When they’re done tip them into a bowl and grind some sea salt over them, depending on how salty you like them. Add a drizzle of neutral tasting oil and mix. Leave to cool.

Lovely and nutritious too Kerry. A little bit of chilli powder through them as well is nice. Pre-dinner nibbles….mmmm…x
